  • Are you craving cookies but cringing at the price…and boxed cake mix is less than a buck? Or do you have a box of cake mix but would rather have cookies? Add 1/2 cup vegetable oil and two eggs to the mix, blend, scoop the dough to the desired size, and bake at 350 degrees!

  • If you rarely use milk but need its creaminess, or if you’re looking for a dairy-free substitute, try coconut milk. Pumpkin puree can work, too.

  • If you don’t have eggs, or only use them for baking, here are some alternatives:

  • Powdered or freeze-dried. Reconstitute according to the directions; you may want to add a little milk or applesauce to add moisture.

  • If the egg in the recipe is there for moisture, use applesauce—generally, ¼ cup to replace one egg. The added sweetness is typically negligible in the finished product.

  • Pumpkin puree. While it will alter the taste, it could work depending on what you’re making and add additional sweetness without sugar. ¼ cup to one egg.

  • Cornstarch. Start with one tablespoon of cornstarch per egg, but there may be some trial and error.

  • If the egg is to bind, not provide moisture or rise, use Chia or Flaxseeds. Let the seeds soak for 10-15 minutes, and it will turn into a gel. It will give a nutty taste and Chia in particular lends a grittier texture, but it could work depending on what you’re making.

  • If you want to replace egg whites, try canned chickpea juice, called “Aquafaba”. Three tablespoons to one egg. However, this substitute is the trickiest because the bean flavor will be there. Chefs have online suggestions to reduce the bean taste… unless you don’t mind bean-flavored meringue!

  • If you have carrots, but don’t eat them often, try adding one to your next sauce. It will add sweetness without sugar.
