Definitions:
SHTF – “Sh*t Hits the Fan”.  The term Preppers use to describe The End of the World as we Know It (TEOTWAWKI). This could mean one of several “doomsday” scenarios, such as WW3, financial collapse of the country, the Yellowstone Supervolcano, an EMP attack, another pandemic, etc.
 

TEOTWAWKI – The End of the World as we Know It. Meaning an SHTF event that has changed every aspect of our lives from what we have grown used to.

COVER CROP – A plant(s) intended to cover the soil rather than be something to be harvested. A cover crop can be eaten or incorporated into the soil to further enrich the soil for the needed season. Green onions, barley, alfalfa, and radish are examples.

Recipes:

No-Knead Boule
3 1/4 cups AP Flour
2 teaspoons salt
1 teaspoon honey or granulated sugar
1 tsp (or packet) active dry yeast
1.5 cups warm water

Directions:

Stir together the flour, salt, sugar and yeast in a large mixing bowl until combined. Add in the warm water and stir with a wooden spoon or spatula until the dough is evenly mixed and no large flour streaks remain (the dough will be soft and shaggy)

Cover the bowl with plastic wrap or beeswrap, and let the dough rest at room temperature or in your oven for 1 hour (it should double in size during that time. 

After the 1 hour rest, transfer the dough to a well-floured surface to shape it. Fold the dough on top of itself, pulling the outer edges up and into the center a few times until the dough feels a bit tighter and holds its shape to form a round dough ball. If still too sticky or loose, sprinkle more flour on. place on parchment. 

Lightly flour the top of the dough ball, and carefully flip it upside-down onto a piece of parchment paper, so that the smooth side is on top. Cover again with plastic wrap or beeswrap while the oven warms up. 

Place the dutch oven inside of your oven, the set oven to 450F. Wait for 20-30 minutes for the oven to heat up, while the dough continues to rest. If the dough rise and spreads out more than you’d like, reshape again. 

Remove dutch oven from the oven. Lift the edges of the parchment paper and put dough ball in dutch oven. put on the lid and bake for 30 minutes. Then carefully remove lid and for an additional 10-20 minutes until the crust reaches your desired level of brown. Allow to cool for 30 minutes before cutting serving.
